Spring Fever...........


Hope you are having a great Saturday....I think I must have Spring fever....

I generally have low energy anyway but,the last few days have been almost no energy...zip,none at all. Hopefully this won't last much longer....I need some refreshment in my mood,a little spring in my step or something.

Lessons in Cooking


I was so proud of myself on Wednesday night when i made dinner for the first time since Max was born. This week has been SO much better, a world of difference from last week, i actually feel like a human. Mostly because our little guy switched from waking up twice a night to only once. It is crazy what a difference that makes! I have my friend Jenny to thank for my new restful nights, she took me out to get yogurt on Monday night and told me to swaddle him super super tight, i had been swaddling -but obviously not tight enough, because that night i did it like she said and it was the first night that he didn't wake up till 2:30 and then slept till 7am! Seriously a tight swaddle and the use of those gas drops are my miracle fixes.

Anyhow i'll write more about how great this week has been on Max's blog this weekend, but i thought i would share a great recipe and then a not so great cooking moment of mine...
I checked out another cookbook at the library, High Flavor Low Labor, and tried my first recipe out of it. The picture above is the Chili Balsamic Marinated Sirloin with Fettuccine and Sun-Dried Tomatoes- its the cover recipe of the book as well. It was really good. I actually think the marinade for the steak is one of my favorites ever and i will be using it in the future for steaks with or without the rest of the dish. And just like the title of the book claims, this recipe is super easy-low labor with lots of flavor! Here is the recipe:

Chili Balsamic Marinated Sirloin with Fettuccine and Sun-Dried Tomatoes
1/4 cup balsamic vinegar
2 tablespoons olive oil
1 tablespoon siracha chili sauce (i have been seeing so many recipes in magazines lately using siracha)
1/2 tsp kosher salt
1 tablespoon black peppercorns (or a blend), roughly crushed
1 tablespoon sugar
1 1/4 pound sirloin steak, trimmed of fat and cut into thin strips
3 cloves garlic
12- ounce jar roasted red peppers, cut into thin strips
half of a 7ounce jar julienne-cut sun-dried tomatoes
16 ounces fettuccine pasta
2 tablespoons canola oil
1 cup grated parmesan cheese

In a medium bowl whisk together the first 6 ingredients. Add the steak, mix to coat well. Set aside to marinate for 15 minutes.

In a second medium bowl, combine the garlic, red peppers & sun-dried tomatoes. Mix well & Set aside

When the pasta is nearly finished, in a large saute pan over medium-high, heat the canola oil. When the oil is hot, remove the steak from the marinade (discard the marinade) and, working in batches if necessary, cook the strips for 1 to 1 1/2 minutes per side.

Transfer the steak to a plate and cover it with foil. Return the pan to the heat and add the red pepper mixture. Toss until heated through.

When the pasta is cooked, drain and add to the pepper mixture. Toss well, then add the grade cheese and toss until melted. Serve topped with steak strips and additional parm.


On another note I was making cupcakes for a St.Patricks day party we went to last night and as i got to the last ingredient i realized i was out of flour! i went down to our food storage closet hoping there might be some and i was out of luck, although i did spot a yellow cake mix. I thought oh what the heck i'll just add that- it has flour in it. as my friend Libby says- it was a recipe FAIL. As you can see in the picture below...

Flowers..............

This post refers to the one before..........she now has her apron full of flowers........yesterday was such a beautiful day I could not resist spending much of it outdoors.....the wind was blowing the wind chimes which I love listening to...my windows were open,welcoming the fresh air.....between trying to do some housekeeping,laundry and making a quick trip to the dollar store for necessitates....I enjoyed just sitting on my porch....it was a very pleasant day indeed.................

 We had a beautiful Easter Sermon,then off to this daughters(below) home for fried fish and the works.
They call themselves the Johnson Tribe.

Nuclear Power Around the World


We have invested heavily in this form of power, and as the map shows, there are nuclear power plants in many places around the world. There are a lot of plants on the Pacific Ring of Fire.

As far as I know, nuclear power has never been profitable, though the statistics are manipulated to make it appear so. It has never been safe, because there is no real way to dispose of the waste, and as we know, natural events can disrupt power to the plants and cause real, worldwide disasters, not to mention events caused by human error.

There are always downsides to power. Coal dirties the air, though stack scrubbers (when used) are much better than they were in the past. Wind generators are poorly designed in many cases, and can cause bird deaths. Solar is expensive and inefficient so far, and geothermal power is an unknown. Wave technology is in its infancy.

As always, we have taken what seemed like the "easy" course, implementing a power source we cannot really control because it promised easy and unlimited power. But it IS limited. The kind of fuel it requires is not abundant in the sense that wind, waves, sunlight and the heat of our planet's core are.

What are we to learn from these errors? The cost in human suffering is steep; so was the cost of coal, between the miners' diseases and disasters, and the lung problems of those breathing the atmospheric particulates. Uranium mining and usage has also hurt a lot of people in its history. We are still learning. We want power to run our heat, cooling, lights and electronics. How do we want to proceed from here?

Sweet find.....................


Wednesday last my daughter Regina was free from her usual job of babysitting.....I had some bookkeeping paperwork to turn in to our accountant for the church and as my van isn't up to making more than a short distance Regina took me into town about 20 miles away! We made a bit of a mother-daughter outing of it. We visited one of our favorite thrift stores,had lunch then went to a really neat Antique Mall called "The Mustard Seed".  It was a fun day for the both of us.....Regina said she was pleased to have some adult conversation for a change....A lot of goo goo ga ga at her house these days :)
The picture that you see is what came home with me from the mall......isn't it sweet...its a reproduction of an antique and I just love it......it had a very low price which made it even more fun to purchase....I wish I would have had my camera with me,there were so many wonderful things to see...maybe,next time I will have it so I can share some pictures with you all........... you can go here to see the website for this shop.......here is one picture from their site...to see more go visit.

Ostrich and lion steal the show.

The weather is pleasant here at this time of the year. Even at 3.00 PM, there is a mild chillness in the air. I thought it is an ideal time to browse through my favorite of book of rare natural facts. I have not opened it since last October.

Some of them really amused me and I though I would share a few rare facts with you.
* Have ever you seen an Ostrich running? It is a delightful sight to watch. They are graceful runners. Do you know they can run faster than horses?

* Here is a new, rather unknown fact. Contrary to the popular belief, the lions are selective hunters and they definitely don't spend their entire time hunting down. I read that they have a limit of just 20 killings in a YEAR! Here is another interesting fact. The lioness does 90% of the hunting!

While both the above seem to be authentic, I can't say the same about this:
Cows have four stomachs!

Moving leaves and sticks.

In the first four images below, you can spot a frog, a fish, a sea horse and a moving leaf.











































All are live creatures though living under camouflage and you can all these camouflages are nature's best creation. There may be more such creations from the God who has obviously chosen not to reveal all of them to man which itself is a proof that God is technologically highly advanced than man.

When I saw these pictures at webecoist, my mouth fell agape. I could not suppress my deep appreciation for the God who gave these survival methods to the creatures.

The last image is of course of a man who is trying to merge with the surroundings. What a poor attempt!
